WHAT IS HOT HONEY (AND SHOULD YOU MAKE IT OR BUY IT?)
Hot honey is exactly what it sounds like — sweet honey infused with chili heat. It’s smooth at first, then slowly builds with a warm, lingering spice that works insanely well in cocktails.
You can absolutely make it yourself. Warm some honey with red pepper flakes or sliced fresh chilies, steep, strain, and store.
But if you’re not into DIY, just buy it.
Mike’s Hot Honey is the gold standard, and it’s easy to find at most grocery stores or online.
It’s perfectly balanced, shelf stable, and consistent in flavor. That makes batching way easier.
DOES REGULAR HONEY WORK?
Sure! But it’s not the same drink.
You’ll still get a smooth, citrusy margarita with nice depth from the honey, but without the spicy kick. So if you’re spice-sensitive, or just want a milder version, feel free to use regular honey and call it a Honey Margarita.
Still delicious. Just not hot.
HOW SPICY IS IT REALLY?
This recipe has a kick, but it won’t melt your face off. It’s warm and balanced, but not hell-fire-hot.
The heat level depends on your hot honey brand and how much you use. You can always tone it down by doing half regular honey and half hot honey, or crank it up by adding sliced jalapeño to your bottle before freezing.
You’re in control. Taste it before refrigerating and adjust until it hits the sweet spot!
CHOOSING THE BEST TEQUILA FOR A HOT HONEY MARGARITA

Blanco tequila
Stick with something clean and crisp. You want a smooth agave base that lifts the lime and honey, not something aged and oaky that muddies the flavor. Reposado can work, but blanco is the sweet spot for a spicy margarita.
Look for 100% agave
Always. It should say it right on the label. If it doesn’t, skip it.
Don’t overspend
You’re batching. You want something solid and reliable, not something so delicate you feel bad mixing it. Save the fancy bottle for sipping neat.

How long does it last in the freezer?

What kind of honey is best?
